When it's tītī season

Tītī (aka mutton bird, a delicacy and my fav kai ever) is a small bird that mostly eats fish so it has this super salty, rich flavour. When I was growing up we used to buy tītī from the shop on Commerce Street, so Frankton is associated with the happiest time of the year - harvesting season. These three prints are screenshots of the last time I cooked and ate tītī (you know I'll be flexing this on insta everytime I cook it!!) There's a process of boiling them several times to remove the fat, and then cooking them with potatoes, kūmara, kamokamo, carrots, whatever else. Honestly it stinks the whole house out but it smells amazing to me. The prints document this process and the life long exchange between my puku and Frankton.
